ice cream sandwich


One of the best desserts ever created. I am in love with the originator of this dessert……Ice Ceram Sandwich.
I don’t like to go with the tiny sandwiches; I make a large sandwich and cut into wedges. It looks better and can accommodate more layers of ice cream.

ICE CREAM SANDWICH
1/2 - cup butter
1 - cup sugar
1 - egg
1 - teaspoon vanilla extract
1-2/3 – flour
3/4 teaspoon baking powder
1/4 - cup cocoa
1/2 teaspoon baking soda
1/2 - teaspoon salt
1/4 - cup milk
1/2 - gallon desired flavors ice cream, slightly softened

METHOD
·         In large bowl, beat butter, sugar, egg and vanilla until well blended.
·         Add baking powder to flour and stir flour, cocoa, baking soda and salt together; add alternately with milk to sugar mixture, beating until well blended.
·         Cover; refrigerate about 1 hour.
·         Heat oven to 375°F.
·         Dish into a round baking tray.
·         Bake 10 to 15 minutes or until set. Cool
·         Remove turn out of tray and slice into two.
·         Scoop some ice cream of various flavors onto the lower half using a spatula to level each flavor before adding another.
·         Top with the other half of pastry
·         Wrap in foil; freeze until firm.
·         Cut up into wedges and serve
