GLOBAL WARMING

I was really craving for some mushrooms and when I asked where I could get some, I was told they were not in season yet. With all the noise I make about food, you would think I’d know when these things are in season, but it isn’t me; it is this confused weather. Let’s be real, this Global Warming business is no joke. We have been having “Hot and Cold”,” Yes and No” weather so long I’ve lost track of when it was supposed to start raining.
So you can imagine how excited I was a when I went to the ‘Commercial Area’ and saw mushrooms sitting on a vegetable vendor’s table. They were not the wild ones but they would do. I could have gone with soup but it would take too long and I really wanted to eat some mushrooms so I made a Sausage and Mushroom sauce and it was great.

SAUSAGE AND MUSHROOM SAUCE
 
Ingredients
8 or more Mushrooms
3 Sausages
2 medium sized Onions
Butter/oil
1 large Green pepper
Corn Flour
3 Garlic
Powdered Pepper
1 thumb sized Ginger
Curry
Lemon pepper/ mixture of black pepper and grated lemon rind

Method
·         Clean mushroom and slice each into two or three if they are very large and season with some lemon pepper and a touch of salt
·         Slice up sausages, melt butter in a pan and fry sausages in the pan till they brown
·         Set aside sausages and fry mushrooms in same pan, do not crowd pan so they can brown quickly without losing much of its juices. You could go two or three rounds
·         Set mushrooms also aside with the sausages
·         Mix a heaped table spoon of corn flour with 1 glass of water. Boil over low heat stirring constantly; add salt, a third of the chopped garlic, a pinch of curry and a hint of black pepper. It should take less than 5 minutes to cook. The colour changes from white to a transparent shade when it is done. Add some more water if it gets too thick.
·         Melt some butter if the pan is dried out after frying the mushrooms, drop in a third of the chopped garlic stir around the pan for a few second and add onions, continue stirring till onions are just sweating. Next add the sausages and mushrooms some pepper the other third of the garlic, grate in the ginger and drop in green pepper
·         Pour corn flour sauce over it, stir add salt if necessary, and leave to cook for about a minute or two.

 Serve with rice, potatoes or any accompaniment of your choice
