DREAMS COME TRUE

Sometimes I get ideas for food in my dreams and just when I have my eyes shut in a peaceful and restful place. If you were born here in Ghana with superstitious Ghanaian parents or family members, you will know that it’s apparently not a good thing to have dreams of you eating or anything along that line.
I don’t know for the people who have dreams of eating with their dead grandmothers and stuff (I think it’s scary)More often than not, when I see or think about something for the better part of the day, ideas about it just rush into my head as soon as I shut eyes to either rest, nap or just sleep.

So if you find it weird that I kind of dreamt this meal up in my semi-conscious state (aka early afternoon rest) on Saturday wait till you taste it and I am pretty sure you will have a change of mind.

 DREAMY YAMS
 

Ingredients
½  a small tuberYam
1 pound minced meat or whole beef
Pepper
2 Garlic
1 Onion
2  tomatoes
2 Green peppers
Salt
2 Garden eggs (optional)
Oil


Method
·         Wash, peel and wash yam again
·         Dice yam into small cubes (about ½ " by ½ ") salt them up and deep fry for a little less than 5 mins. Just to the point where they begin to change colour
·         Season meat with some blended onions garlic ginger, salt and pepper or all-spice and salt.
·         Pour a little oil in a pan and over low heat allow meat to fry for about 7-10 mins covered or to the point where the juices just start to dry up and then add crushed or chopped garlic and pepper
·         Whilst meat is cooking, wash, de-seed garden eggs if using, wash again to get some more seed out and slice up.(you may not be able to get out all the seeds but washing after attempted deseeding helps to get rid of some more seeds)
·         Chop other vegetables
·         Drop garden eggs into pan cover for about three mins and add semi fried yam, onions and about 50 oz stock or water which is the equivalent of 5 to 6 tablespoons cover again.
·         After 10 mins, add green pepper, salt and leave to cook for about another 2 to 3 mins, then add tomatoes, cover again leave to cook for more than 2 mins and dish out.

You can decide to go with chicken, pork, shrimp or whatever meat you like.
