Its beef, its a salad yet its warm...



I passed by the vegetable market on Thursday which is the market day and after I got home, I just had to make something consisting mainly of veggies. So I just whipped this up in about 20 minutes and I think you can do the same in thirty minutes… and you will definitely enjoy it. Get any veggies you like and make it colorful and interesting.
I want to call this a warm beef and potato salad, kind of boring… I know…. Any suggestions for a name? Here it goes......

Ingredients
3 Potatoes
1 large onion
3 medium sized green peppers
2 Tomatoes
Pepper
Garlic
Beef
Carrots Radish and any other vegetable of your choice. Just make it interesting!

Method
Cut beef into thin strips
Peel and cube potatoes
Chop together some about 4 garlic, a quarter of an onion and 2 or 3 peppers (depending on how hottt you like it)
Boil diced potatoes for about 7 minutes be sure not to over boil it otherwise it gets too soggy.
Cut the meat into tiny strips, season with some salt and black pepper.
In a frying pan, pour 2 table spoons of oil and fry meat. Since they are cut into tiny strips it will not take long to fry just be sure not to leave the heat too high.
When it is nearly done, add a spoonful of the chopped garlic,onion and pepper.
Let it all fry together for a minute or two.
Set this aside.
Drain water from potatoes,  add another spoon of oil to the pan if it is too dry, a spoon of the chopped garlic pepper and onion and give the potatoes a quick turnaround in the pan for about 3 minutes.
Set the potatoes aside
Then throw in the last of the onions pepper and garlic, add the cubed  onions, radish, carrots, green pepper and whatever veggies you like. Keep the heat high so it does not get soggy but be sure not be overcook or burn it. You want it crunchy and tasting fresh. Keep tossing or stirring. (Do not add the tomatoes at this point)
After about 2 minutes, add the cooked beef,
Add sautéed potatoes; continue tossing for about 2 minutes.
Add a bit of salt if needed, then drop in deseeded chunky chopped tomatoes, black pepper, toss for less than a minute and you are ready to eat.



You can vary the ingredients to suit your taste, you can go with chicken, shrimp, any other meat or even fish if u like except that fish might break up in it so be careful with the handling.
