ONE AND A QUARTER


I would have really enjoyed breakfast on Saturday. I made these and they were great, just that my kid brother had just returned home for vacation and he ate almost every one so I think I had one and a quarter. Anyway, I enjoyed it. Hope you do too.

GLAZED DOUGHNUT

Ingredients

2 cups flour
1 teaspoon Yeast
2 tablespoons sugar
1/2 teaspoon salt
1 cup milk plus
1/4 cup butter or margarine
3 egg yolks
Vegetable oil for frying
(Dried fruits; currants etc)
Grape jelly

Directions
Combine flour, yeast, sugar salt and dried fruits (if using) in a large bowl.
 Heat milk and butter to very warm.
Add to flour mixture with egg yolks that have been beaten for about 2 minutes at low speed.
You can add some more flour if dough is too sticky
Knead dough on a lightly floured surface until smooth and elastic.
Cover and let rest for 10 minutes.
Roll out dough.
Cut out as many rounds as possible using a 3-inch cookie or biscuit cutter.
(You can use any other circular object (personally I use a tumbler))
Poke hole through the centre with finger; put both index fingers through the hole from opposite sides and roll round your finger to enlarge the hole.
 Place doughnuts about 2 to 3 inches apart on lightly greased tray.
If there is extra dough, re-roll and cut.
Cover doughnuts and let rise for 45 minutes to 1 hour.
Heat at least 2 inches of oil in a deep pan.
Fry doughnuts turning occasionally until well browned: about 2 to 3 minutes.
Remove from oil and drain on paper towels.
Warm some grape jelly till it is light and dripping.
Glaze doughnuts with jelly and serve warm.

You can decide to be creative with the glaze. Sometimes I like to glaze it with a bit of lemon juice before the jelly. It gives a nice sharp taste. You can just drizzle with some sugar, glaze with melted chocolate etc. Just get the doughnut right and have fun with the glazing.
