CHRISTMAS IN MARCH

When I was a kid, Christmas was so much fun. My aunt would spend Christmas with us and she and my mum would make so many Christmas treats; cakes, pies, doughnuts, flour chips etc. I would help them make the goodies and steal some for myself and my brothers whilst working. This Sunday, my mum and I did something that made me feel like a kid all over again. FLOUR CHIPS! Ingredients 1 cup flour 4 table spoons oil Ginger Garlic Onion Salt Oil for frying Method Crush some ginger garlic and onion In a large bowl, sieve flour, add half a teaspoon of salt and the oil. Rub together till it is smooth, crumbly and can hold for a while when clutched in the palms and dropped Add a table spoon of the crushed spices and a little water to make a firm dough. Roll up, cut up into thin strips and deep fry in hot oil. Leave to cool and serve as snack.

ORANGE CHICKEN SAUCE

There is something special about this dish. It is slightly sweet and yet spicy. You can feel the slight sweetness and also the saltiness. It truly is special and you MUST try it even if you are not found of having your savory dishes taste a bit sweet. YOU WILL LOVE IT ORANGE CHICKEN SAUCE Chicken 2 medium Onions Tomato puree Honey 2 Garlic Ginger Chicken stock Salt Powdered Pepper Black pepper Worcestershire sauce (optional) 2 Carrots Method Dice up chicken fillet Ground some ginger, garlic and onion together and use to season the chicken together with some powdered pepper and salt. Leave chicken covered in a bowl or wrapped in plastic bag whilst making sauce. Chop garlic and onions. Mix together one teaspoon of tomato puree, 3 table spoons of honey, Cook the mixture of honey and tomato puree.
