THE END OF THE RICENESS

If you live in Ghana, you will know how much we love "fried rice and Chicken." "Jollof rice and Chichen". To be honest, we just like RICE. For a small country we eat an awful lot of rice. In 2011, Ghana imported more rice than North Korean... isn't that just interesting... compare our populations... and note that we also produce some amount of rice. I'm trying to mix things up a bit. Saying no to rice is not easy but I've found the perfect replacement and I am trying to do to it everything that we make with rice and see how good or bad it turns out. FRIENDS WITH BENEFITS

It been a long time… have you missed me? I have a lot of recipes and places to write about. Truth is I don’t really know where to start from. Ok let me start off with breakfast and work may way through the lunch tomorrow the dinner and desserts I have. This is a really simple dish. I got my inspiration from  Dionne and Mona my friends from the university. D made me try this thing; the Ivoirians call it Dege (Pardon me if it has been misspelled).  Mona also likes it. I think its popular in northern Ghana too but I don't know what it is called there. I didn't get the recipe from someone who makes it but from eating it, I figured it is made somehow like this so I tried it out this way and I loved it. It’s very simple, delicious and highly nutritious. MUST KNOW!

This is the one thing you can almost always see in my refrigerator. Tomato stew/ Gravy is like the most common dish in Ghana because it’s the base for countless dishes and conveniently goes with lots of accompaniments. The sad part is this, though almost everyone can make it, it doesn’t always turn out the as good as we would hope. There are some secrets to a good gravy which I would like to share with you. ·          Don’t go easy on the onions ·          If it tastes sour, you can add just a little sugar of a little ketchup towards the end “emphasis on little”. ·          Some chopped green pepper, carrots and onions can really bring a dull gravy alive ·          Some stock from which ever meat you use is always good to flavour it up. I saw this recipe in a cook book and it looked so pretty I thought let me try it out and it didn’t turn out bad at all. In fact it was really good. To be honest the dough was a bit difficult to handle and I was tempted to add water but I can assure you that adding more water than the stated amount is not a good idea; 'my first dough will bear witness to that'. ONE AND A QUARTER

I would have really enjoyed breakfast on Saturday. I made these and they were great, just that my kid brother had just returned home for vacation and he ate almost every one so I think I had one and a quarter. Anyway, I enjoyed it. Hope you do too. GLAZED DOUGHNUT Ingredients 2 cups flour 1 teaspoon Yeast 2 tablespoons sugar 1/2 teaspoon salt 1 cup milk plus 1/4 cup butter or margarine 3 egg yolks Vegetable oil for frying (Dried fruits; currants etc) Grape jelly Directions Combine flour, yeast, sugar salt and dried fruits (if using) in a large bowl.  Heat milk and butter to very warm. Add to flour mixture with egg yolks that have been beaten for about 2 minutes at low speed. You can add some more flour if dough is too sticky Knead dough on a lightly floured surface until smooth and elastic. Cover and let rest for 10 minutes. Roll out dough. ONE POT PASTA CASSEROLE

Hello everybody! It’s been too long of a beak and I am back. Promise never to desert you guys ever again. I hope this great, tasty, fattening meal will make it up to you. ONE POT PASTA CASSEROLE 2 Sausages Onion 2Tomatoes Pepper 2 Garlic Parsley Cheese Butter Pasta Green Pepper, Carrot and any other vegetable of your choice Salt Teaspoon sugar Mozzarella Cheese Chop one small onion and 2-3 garlic into tiny pieces Pulse two tomatoes Heat some butter, toss a half of the chopped onions and garlic in it and fry over medium heat for a minute and half. Dilute two tablespoons full of tomato puree with one tablespoon of apple cider vinegar or any other vinegar and 120 oz ie about 3 ladles of beef stock or water. Pour in tomato puree leave to cook for 5 mins then add the fresh tomatoes and the other half of the chopped onions and garlic and abut 80oz of water or stock. Add pepper, salt, some dried parsley and some black pepper (rosemary optional)....

CHRISTMAS IN MARCH

When I was a kid, Christmas was so much fun. My aunt would spend Christmas with us and she and my mum would make so many Christmas treats; cakes, pies, doughnuts, flour chips etc. I would help them make the goodies and steal some for myself and my brothers whilst working. This Sunday, my mum and I did something that made me feel like a kid all over again. FLOUR CHIPS! Ingredients 1 cup flour 4 table spoons oil Ginger Garlic Onion Salt Oil for frying Method Crush some ginger garlic and onion In a large bowl, sieve flour, add half a teaspoon of salt and the oil. Rub together till it is smooth, crumbly and can hold for a while when clutched in the palms and dropped Add a table spoon of the crushed spices and a little water to make a firm dough. Roll up, cut up into thin strips and deep fry in hot oil. Leave to cool and serve as snack.
